I usually can't be bothered to sort anything except the misc pieces that I only have of a few of each. Otherwise I tend to just keep all of my (relatively modest amount of) K'nex in a bag and dig for the pieces I need. Funnily enough, that bothered my girlfriend just enough that she bought me a fishing tackle box and organized my pieces in there. So yeah, moral of the story, if you don't want to do it, get someone else to do it for you. =P If you've a younger sibling, could easily pay them a small amount to do your sorting.

I always sort all my pieces by shape and colour, that can take a few days after taking down a ball machine! I usually put on some music I enjoy and, well, do the sorting so that it is done.

I always keep my pieces sorted. I have about 3000.

I have small (3L) containers of each type of regular piece categorised by type (rod/connector) and size. All the containers fit in a larger box. Pieces such as wheels, gears, motors, tubes, etc are in random unordered box.
Whenever I need a piece, I know where it is, and take it from its bucket. When I deconstruct, I return each piece to its container as I take parts apart.

This process probably doubles the amount of time to deconstruct machines but it makes building so much more enjoyable and convenient.

It took me a long time to organize my pieces at the beginning. Now, I just sort them as I take builds apart. I keep most of mine in gallon-size plastic bags and just sort them by piece type. Usually, I just put on a show that I enjoy watching, and I go to work taking stuff apart and sorting. Yes, it takes a while, but I can't stand to have them all mixed together.  :)

I have 40 screw bins (The stackable/wall mounted small ones) to sort all my small pieces :)

I actually enjoy sorting really much!
Perhaps it's also because I don't build huge things like ball machines, but K'NEX sorting I enjoy really. Also more than LEGO-technic sorting, for instance. There's just much less different kinds of pieces.
I sort by piece, so focussing on taking out all black rods, for instance, then moving to the next type of piece, and so on. You can't get all of them, because you tend to overlook parts, but that's all-right.
Often, while breaking down, I do start building something new already... so many pieces pass through my hands, and ideas start to develop, haha
